You are not required to take the ServSafe® exam specifically. There are other state approved exams and certifications. All state approved exams must meet a certain criteria set forth by the State of California, and must contain content that the state expects you to know.
However, ServSafe® is specifically required by some companies who find this training superior to others. This includes many chain restaurants, hotels, hospitals, school districts, etc.
ServSafe® instructors are required to follow specific guidelines in presenting their program. In class, they are required to use only those teaching materials designed by the Educational Foundation of the National Restaurant Association.
This provides consistency and thoroughness of training for every attendee at every class.
Beware of companies that use the ServSafe® logo but are not teaching a ServSafe® class. Many companies will display the ServSafe® logo and give you a ServSafe exam upon request, when in reality they are teaching a program of their own design. Some will even charge you extra for the ServSafe® exam.
